Making Process & Some Good Recipes

I posted here about my running adventures that started a bit after the new year. When I first posted, I was so happy I ran 2 miles without stopping. And today I’m equally happy to say that I ran four! Now, I know to a lot of runner workout people that doesn’t sound like a lot. But honestly, I don’t think I’ve ran that much since I was on the basketball team in jr. high! It’s been so awesome seeing and feeling the progress.

It’s really made me realize how much as a creative, we need to get out into the world and experience it, so we have something to contribute to our work. I was a bit nervos at first about leaving my desk for that long during the day to go running- but I honestly feel more productive than I have been in a long time. It always surprises me! But cranking away just telling your brain to work harder doesn’t do it for me. Of course there are times when you have ro power through, but getting out, taking in the world gives you so much freedom to give back to the world.

I’ve been cooking a lot more too. Still planning out the meals! I thought I would list a few of my favorites I’ve made lately incase you’d like to make them as well :)


Fiesta Lime Rice.
Get some blue chips from Trader Joes to go with this one and you have yourself a Mexican party in your mouth. And it’s really easy to make. And quick, which is always good in my book :)


Kale and Spinach Pasta Bake
I’m a sucker for a hearty pasta casserole. And this isn’t the kind you bring to the picnic potluck. This is the kind you make for yourself and don’t share. (Well, maybe your husband can have some, and if you have other friends, I guess they can have some too, but your gonna want to keep it for yourself) Confession- this was my first time ever cooking/using/purchasing kale! It’s always intimidated me in the grocery store. But I did it! And I will do it again.


Cheesy Baked Spaghetti Squash
I’ve made spaghetti squash one other time in my life. It was an experience for sure… these things are so weird how it really does string and look like spaghetti! It’s totally low carb and high in vitamins A & C. You can’t go wrong with this one. (Another simple recipe to follow!)


Cajun Chicken Pasta
I can confidently say this has been my favorite meal I’ve made in the past 2 weeks. It didn’t hurt that my husband was really into it too – that always makes it better, I think.


Hearty Lentil Soup
I’ve had a bag of lentils in our pantry for a long time. I once heard they were good and bought some, but again, they intimidated me and sat in our cupboard, not being eaten. When I saw this recipe I thought it would be a good time to bust those things out and cook them. I did- and they were delicious in this soup. It was great leftover too- especially in this “cold weather” we were having…

  1. Thank you so much for sharing these recipes you’ve been working on, Jo!! I saw the kale, spinach recipe on my facebook newsfeed and I really want to make it for my mom. I’ve never bought or cooked kale either, but apparently my mom got some the other day because the doctor said that kale is good if you have a bad liver which she does :( So I want to make it for her!! :) I LOVE reading your posts and it helps me to be updated on what you’ve been to which is FAN-TAS-TIC.
